My friend said “chocolate and cherries with a simple frosting” when I asked if what kind of cake he’d like for his birthday. Slivering the chocolate was the first step in chocolate genoise cake. I believe I will slice the cake in half, make cherry mousse to fill it, and then glaze the whole thing with cocoa glaze.

Have you ever heard of the “Microplane” tool for grating chocolate and hard cheeses and zesting citrus fruits? It is amazing, and only about $10. They have all different kinds at http://www.microplane.com. I give them as presents all the time, and people always love them.

to microplane that much chocolate would take a ridiculously long amount of time. good for nutmeg, though.
