My friend said “chocolate and cherries with a simple frosting” when I asked if what kind of cake he’d like for his birthday.  Slivering the chocolate was the first step in chocolate genoise cake. I believe I will slice the cake in half, make cherry mousse to fill it, and then glaze the whole thing with cocoa glaze.

  • Have you ever heard of the “Microplane” tool for grating chocolate and hard cheeses and zesting citrus fruits? It is amazing, and only about $10. They have all different kinds at http://www.microplane.com. I give them as presents all the time, and people always love them.

  • to microplane that much chocolate would take a ridiculously long amount of time. good for nutmeg, though.
